This recipe is taken from my most recently published cookbook “Un Mundo de Comida con Los Ingredientes del Ecuador.” Available at all major bookstores in Ecuador and on Amazon.com.
2 medium passion fruits
2 tablespoons passion fruit seeds
1 clove of garlic, pressed or crushed with salt
1 teaspoon lemon juice
1 teaspoon brown sugar
3 tablespoons of oil
1 teaspoon Dijón mustard
2 tablespoons minced cilantro
Salt and pepper to taste
Remove the pulp with the seeds from the passion fruits. Reserve two tablespoons of the pulp with the seeds. Place the rest of the pulp in a small strainer and crush with a spoon until you have very concentrated juice.
In a jar with a lid, add the oil and the other ingredients. Wisk with a fork until you have no lumps of mustard. Put on the lid and shake vigorously until everything is thickened.
You can dress any salad with this wonderful vinaigrette. The base is the passion fruit, a very popular fruit in Ecuador, native to the rain forest.
Of course we know it is good to eat more salads. And with this recipe we have a great option to vary the taste of our favorite salads.
